Eaux de Vie
Eau de Vie is a French expression meaning “water of life”. Eau de Vie is brandy made by crushing and fermenting fruit, then distilling that fermented fruit mash. It is generally colorless, bone-dry, and around 80 proof. Eau de vie is served as a digestif, to aid in digestion at the end of the meal.
The heart of Clear Creek’s product line are the eaux de vie, all made according to the most old-fashioned techniques. We use only pure whole fresh fruit, some of which we grow in our own orchards, and some of which is grown by local farmer friends. We crush and ferment the whole fruit, and then distill the fermented mash in our small German-made pot stills.
